Stuff the inside of Green Vortipa with your ricotta cream, put it on the plate with the tip pointing upwards, then decorate with your candied fruit and caramel threads.

Step 1

In una ciotola monta la panna con la scorza d’arancia, poi aggiungi poco alla volta lo zucchero a velo e la ricotta. Per i fili di caramello, sciogli in una casseruola lo zucchero con qualche goccia di limone. Appena assume una colorazione ambrata il caramello e pronto. Prelevalo con una forchetta e fallo colare su un foglio di carta da forno muovendo la forchetta in modo da formare i fili. 

Step 2

Whip your cream with the orange zest in a bowl, then add your icing sugar and ricotta cheese a little at a time. Prepare your caramel threads by melting the sugar with a few drops of lemon in a saucepan. As soon as it takes on an amber colour, the caramel is ready. Take it out using a fork and slowly pour it onto a sheet of baking paper, moving the fork so as to form the threads.

Step 3

Cook your pasta in boiling sugar water for 11 minutes, then drain all cooking water from the shapes (place them upside down on a clean tea towel).
