BluRhapsody pasta shapes appeared in the tasting menu of Stelle d’Autunno, an event organised by ItaliaSquisita to celebrate the excellence of Apulian cuisine, as well as a charity initiative to save Salento’s centuries-old olive trees from destruction.
On 10th October ‘Stelle d’Autunno’ was held, a big festival dedicated to the excellence of Apulian gastronomy, organised by ItaliaSquisita in collaboration with Borgo Egnazia resort in Savelletri, in the province of Brindisi. It was definitely an event involving all senses: top-level cuisine immersed in a fairy-tale setting amidst enchanting villages and centuries-old olive trees. And it was the very Apulian olive trees that were the real core of the event, because proceeds of the soirée were donated to Save the Olives non-profit association, which is committed to safeguarding olive growing in Salento and its monumental olive trees, a huge heritage that is now jeopardized.
The theme and protagonist of the soirée was Apulian cuisine, celebrated through the interpretations of starred chefs coming mainly from Apulia, who told their vision of Apulian gastronomy through their dishes. The result was an extraordinary mix of traditional recipes and extremely creative gourmet reinterpretations, without ever losing sight of local products.
And, speaking of innovation, two of BluRhapsody most iconic 3D-printed pasta shapes were also on the menu: Sfera (a very elegant fresh pasta shape to be stuffed, customised in purple for this occasion) and Clam (a pasta shape that faithfully replicates a clam shell). Absolute innovation, while elevating pasta tasting to its highest level. BluRhapsody shapes were presented through the interpretation of Chefs Antonio Bufi, of Matera La Gattabuia restaurant and Nicola Fossaceca, one Michelin star at San Salvo (Chieti) Ristorante al Metrò. Here are their dishes:
Antonio Bufi La Gattabuia, Matera BluRhapsody Sfera stuffed with yam and Calciano hen meat, mushroom water, red mullet cooking juices and wild cardoon cream.
Nicola Fossaceca* Ristorante al Metrò, San Salvo (Chieti) BluRhapsody Clam with chards and Balfegò JdC tuna ventresca.
