With cod mascarpone cream and yellow cherry tomatoes reduction

For your cod cream, steam the fish, add salt and pepper and remove the fishbone. Once cooked, add mascarpone cheese, a little bit of oil and blend it all together. Brown your tomatoes on a low heat with a little bit of oil and a clove of garlic to prepare your yellow cherry tomatoes sauce. Add a pinch of salt and sugar and puree using an immersion blender. Cook pasta for 2 minutes in boiling salted water, use a pastry bag to stuff it with your cod cream and decorate with a few drops of your cherry tomatoes sauce and a sprinkling of bottarga.

With citrus custard and strawberry sauce

Prepare classic custard with some lemon zest. If you prefer the chocolate version, add a few tablespoons of sieved cocoa powder to your cream. For the sauce, blend your strawberries with the juice of half a lemon. Meanwhile, heat water and sugar in a small saucepan, add your strawberry puree, a little cornstarch and cook over a low heat until the mixture thickens. Cook pasta for 2 minutes in sweetened boiling water, stuff with custard and decorate with your strawberry sauce.

Consume after cooking.
Cook the product in boiling salted water for about 2 minutes, preferably a few units at a time. Drain very carefully, preferably using a skimmer, and make sure that no water remains trapped in pasta.
