Here is an extremely simple finger food that is perfect for the holidays. Let your smoked salmon marinate for a few hours in orange and lemon juice, then drain and cut it into small pieces. Season with EVO oil and pepper.

Cut your kiwi fruit into cubes and add them to the salmon tartare. Cook your pasta in boiling salted water for 13 minutes, then drain all cooking water from the shapes (place them upside down on a clean tea towel).

Fill Xmas with your tartare... and enjoy a beautiful and delicious Christmas appetizer.
You can also use a mango or the pulp of a tangerine instead of a kiwi.
