Sfera with creamed asparagus and Parmesan cheese crisps

Recommended serving as an appetizer:

Extra virgin olive oil
Parmigiano Reggiano cheese
Sweet paprika



For your creamed asparagus, brown one shallot, the asparagus, a diced potato and let all take on flavour. Add a little water or broth and cook over a low heat until vegetables are soft. Remove the pan from the heat and blend using an immersion blender. Cook your pasta in boiling salted water for 2 minutes and drain all cooking water from the shape. Stuff your spheres with your creamed asparagus, garnish with asparagus tips, Parmesan cheese crisps and a few drops of sweet paprika-flavoured oil. To prepare your crisps, place a spoonful of grated Parmesan cheese in a non-stick pan and leave on a low heat until golden brown.
