Salix with ricotta cheese cream and turnip greens, fried anchovies and chilli

Ingredients

4 pieces of BluRhapsody Salix
200 g of turnip greens
4 clean anchovies
3 tablespoons of fresh ricotta cheese
2 tablespoons of semolina (or breadcrumbs)
EVO oil
Seed oil for frying
Fresh chilli
Salt
Pepper

Preparation

Turnip greens

Clean the turnip greens and cook in salted water for about ten minutes. Drain and set aside 4 tufts to decorate. Blend the rest with ricotta cheese, oil, salt and pepper. You can also add some fresh chilli.

Anchovies

Coat anchovies in semolina (or breadcrumbs) and fry in a saucepan in plenty of oil. Add salt and keep warm.

Pasta

Cook Salix in boiling salted water for 2 minutes, stirring gently. Drain using a skimmer and empty each piece of all cooking water.

Stuff with cream and an anchovy, decorate with turnip green tufts and sliced chilli.

Our tip

You can also replace turnip greens with broccoli or spinach. For a more intense flavour, sauté vegetables in a pan with oil and garlic.
