Cut your courgettes and brown them in a saucepan with a little oil. Add a teaspoon of curry dissolved in a little water, cover with a lid and cook until your courgettes are soft. Blend using an immersion blender and add oil at a steady trickle. Blanch you leek and carrots, cut them into ribbons using a potato peeler and set aside to garnish the dish.

Cook Ovo in boiling salted water for 2 minutes and make sure to remove all cooking water from your shapes by placing them upside down on a clean tea towel.

Stuff Ovo with your curried courgette cream using a pastry bag, turn it upside down on the plate so that the filling hole is not visible, decorate with your carrots and leek and add a few cream cheese flakes.
Also try cream of asparagus: use the stalks for the cream and set the tips aside for decoration.
