To prepare your shi drum fish tartare, remove the skin from your fish fillets, cut them into small pieces and marinate for about an hour in extra virgin olive oil, dill and salt. For the cream: cook your turnip tops for 5 minutes in boiling salted water, plunge them into water and ice and whisk with oil, salt and pepper. Cook your pasta in boiling salted water for 2 minutes and drain cooking water from the shapes (place them upside down on a clean tea towel). Place your pasta on the turnip tops cream and stuff your heart with the tartare. For decoration, you can use freshly-blanched courgette ribbons (leave them crunchy!), a few pea shoots and the pasta word “love”.
