Prepare the filling by kneading 100 g of sheep ricotta cheese with 3 teaspoons of cane sugar and half a teaspoon of vanilla extract, then leave to rest in the fridge. Cut the pear into cubes and cook it in boiling sugar water for approximately 2 minutes. Leave to cool and then add your ricotta cheese.

Cook your pasta in boiling sugar water for 2 minutes and drain to remove cooking water from the shapes (place them upside down on a clean tea towel).

Stuff the hearts with your ricotta cheese cream and decorate your dish with pear cubes, chocolate shavings, persimmon mousse (you can prepare it by passing the pulp through a strainer), strawberries and mint leaves. Add the word love and serve.
You can replace persimmons and strawberries with any seasonal fruits!
