For the pea cream, cook the fresh peas in water, then blend them with a drop of cream and add salt.

Sear the scampi previously removed from their shell. Cook the pasta in boiling salted water for 12 minutes, drain, eliminating the water from inside the shape and insert a scampi into each pasta shape.

Serve on pea cream and decorate with lumpfish roe and crispy leek strips.
