Gorgonzola cheese
Beetroot
EVO oil
Salt and pepper

Heat a piece of sweet gorgonzola cheese in a bain-marie or in a saucepan and work it with a fork until it takes on the consistency of a cream. Add a few drops of beet cooking water to get a nice dark pink color.

Cook your pasta in boiling salted water for 2 minutes, drain, taking care to eliminate all the water from inside the shape.
3.
Stuff with the gorgonzola cream and decorate as you like. Place, if you like, each form on beetroot water with a few drops of oil.
