Ingredients

Fava beans
Purple cabbage
Caprino cheese
Mint
EVO oil
Salt and pepper

Cook fava beans in salted boiling water for about 10 minutes, then peel. Keep some aside and blend the rest with oil, salt, pepper and a few mint leaves. Add caprino cheese. Brown the purple cabbage with oil, add salt and blend adding a little water for a more liquid texture and a more delicate flavour. Strain using a sieve.

Cook Kalpis in boiling salted water for 2 minutes, stirring gently. Drain using a skimmer and empty each piece of all cooking water.

Stuff with fava bean cream (using a pastry bag) and place the small amphorae on purple cabbage water. Decorate with a few whole fava beans and mint leaves.
If you don’t like fava beans, you can use fresh peas instead. Purple cabbage can be replaced with red beet.
