For this recipe you will need to start several days in advance, but we can assure it will be worth it. Mix sugar and salt in equal parts in a soup plate, place an egg yolk in the centre and cover with the salt and sugar mixture, taking care not to break it. Cover with cling film, place in the fridge and marinate for at least a week. After this time, rinse the yolk and leave it to air dry. You are finally ready to prepare your gourmet carbonara!

Lay your bacon slices on a microwave grill, place a soup place underneath to catch the fat that will drip off while cooking and cook in the microwave until the bacon is crispy. Cook your pasta in boiling salted water for 2 minutes and drain all cooking water from the shapes (place them upside down on a clean tea towel).

In the meantime, mix your grated pecorino cheese with the melted bacon fat, a pinch of saffron and add a little cooking water to obtain a creamy texture. Stuff Sfera with the pecorino cheese cream, grate your “yolk bottarga” and add your crispy bacon.
If you prefer, you can dice the bacon and brown it in a pan without adding any fat. The fat that melts in the pan can be used to cream your pecorino cream.
