Bake your courgettes in the oven at 220 degrees for 20 minutes, season with salt and oil and then blend. Meanwhile, cut a courgette into 5 mm cubes and blanch for 30 seconds in vinegar and water. Slice another courgette using a mandolin, leave it vacuum-sealed with water and salt for an hour, drain and dry overnight in the oven at 60 degrees. Mix your caprino cheese with a little cream.

Cook your pasta in boiling salted water for 13 minutes, then drain all cooking water from the shapes (place them upside down on a clean tea towel).

Leave your pasta to cool and compose your dish: use your courgette cream as the base, add a teaspoon of caprino cheese and alternate the different courgette textures.
This is a dish made with simple ingredients, but it is really tasty. We suggest you make your preparations in advance and then enjoy your appetizer at room temperature.
