Preparation

Maybe it is the pasta hearts, maybe it is the ingredients with their mix of flavours that melt in your mouth in a perfect balance ... but you will fall madly in love with this appetizer. And it is extremely easy to be prepared. Blanch fresh broad beans in boiling water for a couple of minutes, then place them into cold water and drain. Place them in a blender, add oil and salt to taste. Season your shrimps with oil, salt and pink pepper.

Cook your pasta in boiling salted water for 13 minutes and drain to remove all cooking water from your shapes (place them upside down on a clean tea towel).

Stuff Cupid with your creamed broad beans, place a shrimp on each shape and add some pistachio crumbs and pink pepper to taste.

As an alternative, you can grill your shrimps in a very hot pan with a drizzle of extra virgin olive oil. It will only take 30 seconds per side.
