Prepare a marinade for your fish by mixing the juice of one lemon, a few tablespoons of extra virgin olive oil, salt, pepper and thyme in a bowl. Arrange the cod fillet so that it is completely immersed, then cover with cling film and leave to rest in the fridge for at least three hours. After this time, sear the fish in a pan for a couple of minutes on each side and then chop it up with a knife into tartare.

For your tangerine coulis: squeeze the juice of two or three tangerines, add a few teaspoons of sugar and mix well, then pour into a small pot, bring to the boil and leave on a low heat until reduced.

Cook your pasta in boiling salted water for 13 minutes and drain all cooking water from the shapes (place them upside down on a clean tea towel). Stuff Cupid with your marinated cod, pour over a teaspoon of tangerine coulisse, garnish with a few thyme leaves... and enjoy this wonderful finger food.
Instead of coulisse, you can add tangerine pulp obtained by peeling the segments and gently shelling the inside.
