Cooked beetroot
Parmigiano Reggiano cheese
Walnuts
Lemon
Mint
EVO oil

Dice the beetroot and blend it with your walnut kernels and Parmigiano Reggiano cheese. Add a few drops of lemon, a drizzle of oil and salt to taste.

Cook your pasta in boiling salted water for 2 minutes and then drain all cooking water from the shapes (place them upside down on a clean tea towel).
3.
Stuff your pasta letters with the beetroot cream and garnish with mint leaves and crumbled walnut kernels.
