Ingredients
Vortipa BluRhapsody
Cheek lard
Peeled tomatoes
Pecorino cheese
Chilli pepper
Dry white wine
Extra virgin olive oil
Fine salt

Lightly fry chilli pepper and chopped cheek lard in oil in a pan. Brown over a high heat and then simmer with white wine. Add peeled tomatoes and, if you like them, some fresh tomatoes, then cook for a few minutes, until the sauce has dried.

Cook Vortipa in boiling salted water for 12 minutes, stirring gently. Drain all cooking water from the shape using a skimmer.

Season Vortipa with amatriciana sauce, decorate with a few strips of crispy cheek lard and abundant grated pecorino cheese.
