“3 pesto” appetizer with Sfera

When extraordinary recipes of Italian tradition encounter BluRhapsody 3D pasta, the outcome is amazing, to say the least.

Thanks Italian regions of Liguria and Sicily for inspiring this dish.

Ingredients

3 units of Sfera by BluRhapsody per person
Basil leaves
Parmigiano Reggiano cheese
Pecorino cheese
Pine nuts
Walnuts
Milk
Breadcrumbs
Almonds
Fresh ricotta cheese
Tomatoes
Garlic
Extra virgin olive oil
Coarse salt
Fine table salt

Preparation

Pesto

Prepare a clove of garlic and a few grains of coarse salt in a mortar, crush and add basil leaves, pine nuts, grated cheese and oil until you get a thick cream.

Walnut pesto

Soak breadcrumbs in milk and blend them with walnuts, Parmigiano cheese and a clove of garlic. Add milk or a drizzle of oil to get a creamier texture.

Sicilian pesto

Peel tomatoes by dipping them in boiling water for a few seconds, cut them into slices and remove seeds. Bake them in the oven at about 100° for 1 hour and blend them with basil, almonds and Parmigiano cheese. Add fresh ricotta cheese and extra virgin olive oil.

Pasta

Cook Sfera in boiling salted water for 2 minutes, stirring gently. Drain all cooking water from the shape using a skimmer.

Stuff Sfera with your three pesto sauces, decorate as you like... and serve this delicious trio of appetizers!

It is a perfect dish to be served hot but also at room temperature.
