With clam on tomato water

For tomato water: blend whole tomatoes, then sift them using a strainer and add salt. Put a teaspoon of it in the pasta shell, place a clam at the centre and decorate with parsley-flavoured oil and a “coral” wafer (prepare it by emulsifying water, oil, flour and salt, then pour the mixture a little bit at a time into a very hot pan that you have previously greased). Cook pasta in salted boiling water for two minutes and fill it.

Useful tips

Consume after cooking.
Cook the product in boiling salted water for about 2 minutes, preferably a few units at a time. Drain very carefully, preferably using a skimmer, and make sure that no water remains trapped in pasta.

Frozen product. Store at -20°C until use.
