Bunny with radicchio and ricotta cheese cream and crispy bacon
Cut radicchio and cook it in a saucepan with a little oil. Once it has sweated, blend it with ricotta cheese in a blender and add salt to taste. Brown bacon in a pan until crispy. Cook Bunny in boiling salted water for 2 minutes, fill with your radicchio and ricotta cheese cream, then decorate with bacon and a few edible flowers. You can also prepare a courgette cream to garnish your dish.

Prepare the meatball mixture with ground beef, bread soaked in milk, egg, parmigiano cheese, salt and pepper. Make small meatballs and sauté them in a pan with extra virgin olive oil.
For the sauce, sauté chopped celery, carrot and shallot and add the tomato puree. Make a béchamel with flour, butter and milk. In a baking dish, place the bunnies (if you have purchased them frozen, let them thaw in the refrigerator first) and stuff them with tomato sauce, a meatball, béchamel and parmigiano cheese. Bake 7 minutes at 180°.
Useful tips
Consume after cooking.
Cook the product in boiling salted water for about 2 minutes, preferably a few units at a time. Drain very carefully, preferably using a skimmer, and make sure that no water remains trapped in pasta.
