Atom with purple potatoes cream and quail egg yolk.

We perfectly know that glance, a mixture of disbelief and wonder… It is for us a moment of pure satisfaction, it is the very moment when the dish comes and is served at the table. It is that state of profound contemplation before the first bite, which in most cases is almost a hesitant gesture, as if one were afraid of spoiling something beautiful and unrepeatable. But we already anticipate the next moment, an explosion of flavours and suggestions: Atom is a 3D pasta shape that, by its very nature, has pleasantly different cooking points leading to a mixture of “well cooked” and “al dente” pasta that perfectly gratifies the palate of the most demanding tasters. The dish is enhanced by the creamy purple potatoes filling delicately taking to the grand finale, a full and velvety taste that comes from its heart, the quail egg yolk, slightly flavoured by a light sprinkling of Kampot white pepper. We put this and much more into this BluRhapsody creation. We aimed at conveying a feeling while feeling emotions ourselves. Take such a dish to the table and you will understand exactly what we are talking about.
Due to the size of this pasta shape, we suggest serving Atom with purple potatoes cream and quail egg yolk as an appetizer to be tasted while sitting. We have garnished the dish with some lightly caramelized Tropea red onion leaves and some edible yellow flower petals.

Tips

1.

For the purple potatoes cream: boil unpeeled potatoes in salted water, allow to cool and then crush. Meanwhile, boil the cream with a pinch of salt and a drizzle of extra virgin olive oil, then mix with the potatoes puree.

The quail egg should be pasteurized in a bain-marie in the oven for 15 minutes, completely immersed in water at 85°.

For the red onion leaves we have selected Tropea onions, browned in extra virgin olive oil, salt and a bit of brown sugar.

4.

Atom takes six to seven minutes in boiling salted water to be cooked, a few pieces at a time, to be drained preferably using a skimmer and to be served immediately.
